pot of baked beansBaked beans are a classic summer picnic dish with broad appeal. This easygoing recipe turns out sweet, tangy, smoky beans without taking all day. Bacon and onions are readily available at the Lenexa Farmers Market, as is award-winning barbecue sauce from Daniel's Bar-b-q Sauces.

Ingredients

½ pound bacon
1 small onion, diced
3 (15.5-oz) cans white beans
1 ½ cup barbecue sauce
1 ½ cup water
½ cup ketchup
¼ cup brown sugar
2 tablespoons Dijon mustard
1/2 pound bacon

Directions

Preheat oven to 350°. Chop bacon into ¼-inch pieces.

In a Dutch oven, cook bacon over medium heat until crisp. Remove bacon and set aside. 

Drain off all but 2 tablespoons of the bacon fat. Add onions to the bacon fat and cook over medium heat until soft. Add the remaining ingredients and stir well. 

Cover and bake at 350° for 1 hour.
