Recipe: Spinach Apple Mini Cakes

The moist little spice cake is sweet with bursts of delicious tart apple. This recipe won the dessert category in the 2007 Spinach Festival Recipe Contest.

Ingredients

1 C frozen spinach, thawed, well drained
2 Granny Smith apples, peeled, chopped
2 C flour
1 tsp. baking soda
1 ½ tsp. baking powder
½ tsp. salt
1 ½ tsp cinnamon
4 large eggs
1 ½ C sugar
½ C oil
2 tsp. vanilla
Cream cheese frosting

Directions

Preheat oven to 350 F. Prepare muffin pans with non-stick spray. In a medium bowl, whisk together flour, baking soda, baking powder, salt and cinnamon. Set aside.
In separate bowl, beat eggs about 1 minute. Gradually add the sugar and beat until batter is thick and light yellow in color, about 3 minutes. Add oil slowly and then beat in the vanilla. Add the flour mixture and combine just until blended. Fold in apples and spinach. Spoon batter into pans and bake 25-30 minutes or until toothpick inserted in center comes out clean. Remove from oven and cool completely before frosting.

Cream Cheese Frosting

Ingredients

¼ C butter, softened
8 oz. cream cheese, softened
2-3 C powdered sugar, sifted
1 tsp. vanilla extract

Directions

Mix cream cheese and butter on low speed until smooth. Gradually add the powdered sugar and beat on low speed until fully incorporated, smooth and at the desired thickness. Beat in vanilla extract.
