Recipe: Watermelon and Cucumber Salad With Feta
Cool down on a hot day with a refreshing salad. The sweet watermelon complements the crisp cucumbers and creamy feta, all tossed in a tangy vinaigrette. Find locally grown or made watermelon, cucumbers, basil and honey at the Lenexa Farmers Market.
Ingredients
Salad
6 cups cubed watermelon
2 cucumbers, sliced and then cut into quarters
½ cup feta cheese, crumbled
¼ cup basil leaves, removed from stems, can be chopped if desired
Vinaigrette
3 tablespoons honey
3 tablespoons lime juice
2 tablespoons olive oil
¼ tsp salt
¼ tsp pepper
Directions
- In a large bowl, place watermelon and cucumbers.
- In a separate small bowl, whisk the vinaigrette ingredients. Pour over the watermelon and cucumber mixture and toss gently.
- Sprinkle salad with feta cheese and garnish with basil.
