Recipe: Summer Coleslaw With Tomatoes and Corn
Coleslaw is a popular picnic side dish. This creamy, tangy version comes together in minutes and highlights the bounty of summer produce from the Lenexa Farmers Market.
Ingredients
2 cups cabbage sliced finely
½ cup mayonnaise
1 tablespoon powdered ranch dressing
1 large tomato, chopped and de-seeded
1 cup corn
3 green onions, chopped
Bacon bits (optional)
Directions
- In large bowl mix mayo and ranch dressing, stir in cabbage, green onions and corn to make sure all is covered with dressing mix, gently stir in tomatoes. Top with bacon bits, if desired.
