Recipe: Strawberry Quinoa Salad
Shop for berries, green onions, salad greens, basil, and honey at the Lenexa Farmers Market and make this delicious dish.
Serves: 6-8
Ingredients
Salad
4 cups cooked quinoa
1 pound strawberries, stemmed and quartered (or another berry)
4 green onions, sliced
3 ounces arugula, spinach, or spring mix
¼ cup basil, chopped
½ cup crumbled goat cheese
Dressing
2 tablespoons balsamic vinegar
1 tablespoon honey
¼ cup olive oil
Salt and pepper
Directions
- In a bowl, whisk balsamic vinegar and honey together. Continue whisking while slowly drizzling in the olive oil. Season with salt and pepper to taste.
- Toss quinoa with strawberries, green onions, greens, basil, and dressing. Garnish with goat cheese.
