Recipe: Strawberry Quinoa Salad

Spinach and strawberry salad with goat cheese

Shop for berries, green onions, salad greens, basil, and honey at the Lenexa Farmers Market and make this delicious dish.

Serves: 6-8

Ingredients

Salad

4 cups cooked quinoa
1 pound strawberries, stemmed and quartered (or another berry)
4 green onions, sliced
3 ounces arugula, spinach, or spring mix
¼ cup basil, chopped
½ cup crumbled goat cheese

Dressing

2 tablespoons balsamic vinegar
1 tablespoon honey
¼ cup olive oil
Salt and pepper

Directions

  1. In a bowl, whisk balsamic vinegar and honey together. Continue whisking while slowly drizzling in the olive oil. Season with salt and pepper to taste.
  2. Toss quinoa with strawberries, green onions, greens, basil, and dressing. Garnish with goat cheese.
