Recipe: Sheet Pan Winter Veggies and Sausage

Want a healthy meal with little work? Roast your favorite sausages from Hedgewood Farms or JET Produce and Meats on a sheet pan, alongside winter veggies like butternut squash or delicata squash.  

Using this flexible approach, you can mix vegetables you already have in your produce drawer with fresh veggies you get at the Lenexa Farmers Market. Onions, sweet potatoes, carrots and zucchini are all great additions to this quick meal.

Here are two keys to success with sheet pan meals. One, make sure that all the vegetables are cut to about the same size so they will all be fully cooked at the same time. Two, avoid overcrowding the pan so air can circulate, which prevents soggy results.  

Ingredients

1 pound bratwurst or sausages, sliced (or remove skin and create meatballs)
1 delicata squash, seeded and sliced (no need to peel)
1 small butternut squash, peeled, seeded and chopped to 1-inch pieces (approximately 2 cups)
4 large carrots, peeled and chopped into 1-inch pieces.
2 sweet potatoes, peeled and chopped into 1-inch pieces.
1 zucchini, chopped 1-inch pieces
1 tablespoon steak seasoning
1 tablespoon oil

Directions

  1. Preheat the oven to 400 degrees.
  2. Place all vegetables and sausage on the pan. Drizzle with oil and sprinkle with steak seasoning. Mix around until all veggies are coated.
  3. Bake for approximately 30 minutes, check to make sure sausage is thoroughly cooked and vegetables are fork tender.
