Recipe: Quick New Potato Salad

Ingredients

2 pounds new potatoes, boiled in salted water, cooled, cut in bite-sized chunks (no need to peel)

¾ cups mayonnaise

½ cup chopped green onions

4 hard-boiled eggs, yolks removed, whites chopped

1 teaspoon dry mustard

1 teaspoon salt

½ teaspoon ground black pepper

Directions

  1. Mix cooled, chopped potatoes, green onions, and egg whites in a large bowl.

  2. In a small bowl, combine egg yolks, mayonnaise, mustard, salt and pepper until smooth.

  3. Gently stir mayonnaise mixture into the potato mixture until combined.

  4. Refrigerate for at least an hour before serving.
