Recipe: Quick New Potato Salad

Ingredients
2 pounds new potatoes, boiled in salted water, cooled, cut in bite-sized chunks (no need to peel)
¾ cups mayonnaise
½ cup chopped green onions
4 hard-boiled eggs, yolks removed, whites chopped
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon ground black pepper
Directions

Mix cooled, chopped potatoes, green onions, and egg whites in a large bowl.

In a small bowl, combine egg yolks, mayonnaise, mustard, salt and pepper until smooth.

Gently stir mayonnaise mixture into the potato mixture until combined.

Refrigerate for at least an hour before serving.
