Recipe: Kale Pasta
Kale is a highly nutritious leafy green with many health benefits. This garlicky kale pasta is one easy way to work it into a weeknight meal. Finish with dusting of nutty asiago cheese.
Find kale and other hearty greens, olive oil, garlic, butter and fresh pasta (from Zero Zero Handmade pasta) at the Lenexa Farmers Market.
Ingredients
1 bunch (½ pound) kale
½ pound pasta
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, sliced thin
1/4 cup grated asiago cheese
salt and pepper
Directions
- Bring a large pot of water to a boil. Add pasta to boiling water and cook until al dente (about 9 minutes). Drain the pasta in a colander.
- While the pasta is cooking, clean kale and slice in ¼-inch strips.
- In a large skillet, add the olive oil, butter and sliced garlic. Cook over medium heat until garlic is lightly browned and tender. Add chopped kale to the garlic and cook until wilted.
- Add the drained pasta to the pot with the sautéed kale. Toss the pasta and kale together. Season with salt and pepper and garnish with asiago.
