Recipe: Ham and Bean Soup

A comforting bowl of ham and bean soup served with a warm slice of cornbread is hard to beat on a cold winter day. Ham hocks, sliced ham and ham steak all work well in this recipe. All ingredients are available at the Lenexa Farmers Market.

JET Produce and Meats carries a variety of Kansas-grown dried beans from 21st Century Bean in Sharon Springs. Try baking up a cornbread mix from Fyler Farms or from JET Produce and Meats.

Ingredients

1 cup onion chopped
1 ½ cup carrots chopped
1 ½ cup zucchini chopped
1 clove garlic chopped
2 cups ham chopped
1 red bell pepper, roasted (or 4 mini peppers)
1 pound dried beans, such as great northern, navy, black-eyed peas or a bean mix (soak and cook first according to package instructions)
½ teaspoon thyme

Directions

  1. Make sure to cook your beans in advance following the package instructions in a large stock pot.
  2. In a separate pan over medium heat, sauté the onion, garlic, carrots and zucchini.  
  3. Once tender, add the sautéed vegetables, roasted peppers, ham and thyme to pot of cooked beans with their liquid.
  4. Allow to simmer for 30 minutes, then serve.
