Recipe: Fresh Peach Cobbler
Peach cobbler has long been a favorite dessert of the Lenexa Farmers Market's former manager, Jenny Doty. This version comes from her great-grandmother. As a kid, Jenny enjoyed cooking, especially with family members.
One of the fun things about this recipe is that the peaches go on the top, but the cobbler surrounds the peaches and creates a sweet crisp topping. It is always delicious served warm à la mode with a big scoop of vanilla ice cream.
Get fresh, locally grown peaches from Sunflower Orchards in Paola, Kansas. They are sold at the Bos Hill Blooms vendor booth at the Market.
Ingredients
¾ cup sugar
2/3 cup milk
¼ cup butter
2 teaspoon baking powder
1 cup flour
½ teaspoon salt
5 fresh peaches, peeled, pitted and sliced (or 3–4 cups fresh fruit)
Directions
- Preheat oven to 350 degrees F.
- Cream sugar and butter together in a bowl. Then stir in milk and dry ingredients.
- Pour batter in a 9”x 9” pan and spoon fresh fruit gently over the top.
- Place in oven and bake for 30 minutes or until batter has surrounded fruit and is brown on top.
