Recipe: Easy Breakfast Casserole
A hearty breakfast casserole really hits the spot on cold winter days when you don’t want to leave the house. Here’s a simple version that you can customize based on your preferences. Best of all, you can get all of the ingredients from local Lenexa Farmers Market vendors.
Ingredients
1 small onion, chopped
1 small pepper, chopped
3–4 potatoes, shredded
1 pound ground sausage
10 eggs
½ cup milk
½ teaspoon herbs (chives, thyme or parsley)
1 cup shredded cheese
Salt and pepper to taste
Directions
- Heat oven to 350 degrees.
- Cook sausage over medium heat in nonstick skillet until browned. Midway through, add the onion and peppers and sauté together.
- Mix eggs, milk, herbs, salt and pepper together in a separate bowl.
- Place shredded potatoes in bottom of 9x13 casserole or cake pan.
- Layer sausage and veggie mixture next.
- Pour in egg mixture evenly and sprinkle cheese on top.
- Bake at 350 degrees for 55–60 minutes.
If you want to really veg it up, you can add cherry tomatoes, broccoli or asparagus as well.
